Our specialty house coffee, Selva Negra Estate Coffee, is grown by JavaVino owners' parents, the Kühl Family plantation. Selva Negra Estate Coffee is sustainable coffee, Rainforest Alliance certified, organically grown, bird friendly and shade grown, in the highlands of Nicaragua in the Matagalpa region.

The quintessential Nicaraguan Estate coffee has a perfect triangular balance of body, flavor and acidity. It's grown micro region in the Maltagalpa area with a very unique soil and climate. This coffee is highly dependant on the roast. The depth of this cup tends to increase as the coffee cools.

       Whole Bean ~ Light Roast ~ Medium Body ~ Bright Acidity

If you've been to Selva Negra, this is the roast profile that you tasted. At Selva Negra a very light roast in slowly roasted in their German roaster. Medium body. Smooth flavor. Exciting acidity. This light roast brings out milk chocolate brightness with some berry overtones. Depth in this cup tends to increase as the coffee cools.

       Whole Bean ~ French Roast ~ Medium Body ~ Medium Acidity

Called French Rain in our shop, this french roast brings out a rich caramel aroma and sweet dark chocolate, citrus-like acidity. The high altitude that we grow the coffee at allows us to take it to high roast temperatures while maintaining great flavor without the “Char-bucks” aftertaste.
